Want to try something new this year? Veggies always seem to be the last to get eaten, but not this time! These three yummy vegetable dishes are sure to be a hit with everyone. Plus, they’re a healthier spin on Thanksgiving sides. Try one or all three!

Roasted Seasoned Carrots
  • 2 lbs carrots of your choice (thinly sliced or into 1 inch pieces)
  • 3 tbsp olive oil
  • 2 tbsp honey or agave
  • 1 tsp minced garlic
  • 1/2 tsp thyme
  • 1/2 tsp salt
  • 1/4 tsp pepper
Directions
  1. Heat oven to 375 degrees and prepare baking sheet with cooking spray.
  2. Chop or slice carrots.
  3. Mix together olive oil, honey or agave and seasonings in a bowl.
  4. Coat carrots and place on tray in a single layer.
  5. Bake for 30 minutes or until tender flipping half-way through.
Roasted Parmeasan Cauliflower
  • 1 head of cauliflower
  • 2 tbsp olive oil
  • 1 tsp minced garlic
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp pepper
